Instant pot blender roasted red pepper hummus

30 oz can chickpeas, reserve liquid

1 tsp cumin

3 garlic cloves

2 lemon juice

¼ cup olive oil

½ cup tahini

1/3 cup chickpea liquid

½ tsp salt

1/2 cup roasted red peppers

Directions:

Add all ingredients into the glass pitcher. Close the lid. Press pulse until smooth. Top with roasted red peppers before serving.

Honey Glazed Strawberries

Ingredients :

1 tbsp honey

1 tsp lemon zest

1-lb strawberries

3 tbsp melted butter

Bamboo skewers

Instructions :

Soak skewers in water for at least 30 minutes.

Preheat the airfryer to 350 degrees.

Place 3 or 4 strawberries on each skewer.

Combine the remaining ingredients and brush over the strawberries.

Transfer the skewers to the airfryer basket.

Cook for 5 minutes, brush with the honey mixture again and continue to cook for 5 minutes.

Air Fried Tortilla Chips

Ingredients:

1 tbsp Olive Oil

12 Corn tortillas

1 Dash of Lime Juice

Salt to taste

Directions:

Preheat airfryer to 400 degrees

Cut each tortilla into 8 triangles and toss in the oil.

Place half the chips into the cooking basket and cook for 4 minutes.

Repeat with remaining chips.

Season with salt and a splash of lime juice.

Cinnamon Banana Chips

Ingredients:

4 Bananas

1 tsp Cinnamon

Directions:

Preheat airfryer or dehydrator to 120 degrees.

Slice the bananas into 1/4 inch pieces and toss with the cinnamon.

Dehydrate for 3 hours or until firm.

The chips will crisp up when cooled.

Air Fryer Spiced Apple Chips

Ingredients:

1/2 tsp Ground cinnamon

2 Apples, peeled and cored, make horizontal slices –

1 tbs. Brown Sugar

Directions:

Preheat airfryer to 390°F

In a large mixing bowl, combine apple slices, brown sugar and cinnamon.

Arrange the chips in the airfryer cooking basket and cook for 8 minutes.

Air Fried Onion Rings

Ingredients:

1/2 tsp Baking soda

1 Egg, beaten

1 tsp Salt

1 1/2 cups Breadcrumbs

2/3 cup Flour of choice (I like cashew)

1 tsp Paprika

1/2 tsp Black pepper, freshly ground

3/4 cup milk (I like almond)

1 Onion, Vidalia, sliced into half-inch rings

Directions:

Combine flour, baking soda, pepper, paprika, milk, salt and egg. Whisk and set aside.

Preheat the air fryer at 360 degrees.

Pour the breadcrumbs into a large mixing bowl.

Separate the onion into individual rings.

Place each ring in the egg mixture and allow any excess batter to drip off.

Coat each ring in the breadcrumbs.

Transfer the onion rings into the air fryer basket.

Cook for ten minutes, then flip and cook for another 6 minutes.

Air Fried Rosemary Potato Chips

Ingredients:

Air Fried Zucchini Fries

Ingredients:

1 cup Breadcrumbs

2 Zuchcini, sliced into half-inch sticks

1/2 cup Flour

1/4 tsp Salt

1/4 tsp Freshly Ground Pepper

2 Eggs, beaten

Directions:

Combine flour, black pepper, and salt into a large bowl.

Pour the beaten eggs into another bowl.

Combine the breadcrumbs, pepper and salt in a third bowl.

Coat the zucchini sticks with the flour mixture before dipping into the eggs.

Shake off any excess egg and toss into the breadcrumbs mixture.

Allow the zucchini fries to dry out a bit. (About 15 minutes)

Meanwhile, set the air fryer at 400 degrees to preheat.

Arrange the zucchini fries in the air fryer basket in a single layer.

Cook for about twelve minutes or until crisp, flipping halfway.

Spicy Eggplant Chips

Ingredients :

2 eggplants, thinly sliced

2 T flour (I like rice flour)

¼ tsp turmeric

½ tsp cayenne pepper

1 tsp ground cinnamon

½ tsp cumin

½ tsp salt

1 tsp freshly ground pepper

Directions :

Preheat air fryer at 360 F.

In a bowl, combine salt, flour, cayenne pepper, cinnamon and cumin.

Add eggplant slices and toss to combine.

Transfer eggplant slices into fryer basket and cook for 8 minutes.

Flip slices and cook for another 4 minutes.

Air Fryer Zucchini Chips

Ingredients :

2 medium zucchini

1 large egg

½ cup parmesan cheese, grated

4 tbsp coconut flour if you want it to be gluten free otherwise AP flour is fine

½ tsp garlic powder

1 tsp Italian seasoning

1 tsp water

Instructions :

Slice the zucchini into ¼ inch slices.

In a mixing bowl, prepare the egg wash by combining 1 tsp water with the egg and beat until smooth.

In separate bowl, combine the flour, garlic powder, grated parmesan cheese, and Italian seasoning.

Dip the zucchini slices in the egg wash and then in the flour mixture.

Place parchment paper in the air fryer basket and arrange the zucchini in a single layer.

Set the heat to 370 F and cook for 8 minutes. Flip the zucchini slices and cook for another 8 minutes. Repeat process until all the slices are done.
