Gluten free Zucchini Lasagna

Ingredients :

1 lb ground beef

1/2 C. onion, diced

1/2 C. green bell pepper, diced

1/4 C. carrots, finely chopped

2 cloves garlic, minced

1 can tomato sauce

1/2 tsp dried oregano

1/2 tsp dried basil

5 zucchini

1 C. cottage cheese

1 egg, beaten

3/4 C. shredded mozzarella cheese

1/4 C. grated Parmesan cheese


Preheat oven to 350 degrees.

Slice the zucchini into strips.

Combine cottage cheese, and beaten eggs in a medium sized bowl.

Brown the ground beef with the diced onions and drain excess oil.

Add tomato sauce, onions, carrots, garlic, bell peppers, basil, and oregano.

Lightly simmer for 12 mins.

Layer the following in a baking dish: 1/2 zucchini pieces, cottage cheese mix, 1/2 of your beef, 1/2 mozzarella, remaining zucchini, beef, and mozzarella.

Top with parmesan cheese.

Bake for 45 to 50 mins.
