A friendly reminder for anyone who wants to poison a child in hopes of a cure : autists are different, not bad. Yes, there can be difficult and even harmful behaviors associated with autism. But don’t throw the baby out with the bathwater. There are safe and effective treatment options for those issues. Love and acceptance go a long way, too.

Lemon Roasted Potatoes

Ingredients:

2 cups red potatoes, diced

6 tbsp olive oil

3 tbsp minced garlic

2 tbsp grated lemon zest

3 tbsp lemon juice

3 tbsp finely chopped coriander

½ tsp salt

1 tsp pepper

Directions :

Boil the potatoes until soft.

In a bowl, mix the olive oil, garlic, zest, lemon juice, salt and pepper.

Add the potatoes and mix well.

Transfer to a baking dish and roast for 10 minutes.

Veggie Joe’s

This is just as good as the original, but vegan and healthy. Serve with buns or over brown rice.

Ingredients:

1 1/2 cups lentils

2 cups brown rice

8-10 cups water

1 red onion, diced

2 packets dry sloppy joe seasoning mix

2 tsp garlic powder

1 can tomato paste

1/2 cup ketchup

2 tbsp mustard

Salt and pepper, to taste

Directions :

Add the water, lentils, brown rice, onion, and seasoning mix to the slow cooker. Cook on high for 4 hours or until the lentils and rice are cooked and the sauce has thickened. Then add the garlic powder, tomato paste, ketchup, mustard, salt and pepper. Mix thoroughly and cook for another hour.
