Homemade Granola


4 cups old fashioned oats

½ cup sliced almonds

½ cup pecans, chopped

¼ cup pumpkin seeds

¼ teaspoon cinnamon

¼ teaspoon ground ginger

¼ teaspoon salt

¼ cup coconut oil

½ cup maple syrup



Preheat the oven to 350 degrees.  Combine the oats, almonds, walnuts and pumpkin seeds, as well as the spices and salt in a bowl. Mix the coconut oil and maple syrup in a saucepan and melt them together over low heat. Pour over the dry ingredients and mix well. Spread the mixture over a baking tray lined with parchment paper and bake for 10 minutes.
