Beet Soup

Ingredients:

3 tablespoons extra virgin olive oil

1 red onion, chopped

2 garlic cloves, minced

4 carrots, sliced

1 celery stalk, sliced

2 potatoes, peeled and cubed

4 beets, peeled and cubed

2 cups vegetable broth

2 cups water

Salt and pepper to taste

 

Directions:

Sautee the onion and garlic in the olive oil. Add the rest of the ingredients and cook on low heat for 20 minutes.  Puree in batches until smooth.
