Instant Pot Rattatoui

Ingredients:

1 large eggplant, peeled and sliced

4 small zucchini, sliced

1 bell pepper, diced

6 tomatoes, diced

1 medium yellow onion, chopped

2 tsp herb de provence

Directions:

Mix all the ingredients in Instant Pot.

Set the vent to “sealing”.

Cook on “Stew” setting for 25 minutes.

Allow the pressure to release naturally.
