Leek and Veggie Casserole

Ingredients:

4 leeks, cut into sticks

½ cup black olives

2 red onions, sliced

4 tomatoes, quartered

1 zucchini, sliced

2 garlic cloves, chopped

½ cup vegetable stock

1 tablespoon lemon juice

1 teaspoon Dijon mustard

Salt and pepper to taste

Directions:

Combine all ingredients and pour into a glass baking dish. Bake in a preheated oven at 350F for 30 minutes.
