Club Med Tuna Salad


1 can water packed tuna, drained

4 roasted bell peppers, chopped

¼ cup pitted black olives

4 artichoke hearts, drained and chopped

½ teaspoon dried basil

½ teaspoon dried oregano

2 tablespoons chopped parsley

2 cups arugula leaves

2 tablespoons balsamic vinegar

Salt and pepper to taste



Combine the tuna, peppers, black olives, artichoke hearts, herbs, parsley and arugula in a bowl. Drizzle with vinegar and season with salt and pepper.

    Tuna salad is a staple for me. Never thought of adding artichoke hearts but it sounds yummy. Going on the ‘to try” list.
