Broccoli Leek Soup


5 cups broccoli

1 leek, halved along the length and thinly sliced

1 large potato, peeled, finely chopped

2 garlic cloves

1 vegetable stock bullion cube

4 cups water

1/4 cup basil leaves

1/4 cup fresh parsley

Olive oil spray

Directions :

Cook leeks in oil until they’re tender. Add potato, garlic, vegetable stock cube and water. Bring to a boil and then allow the mixture to simmer for 10 minutes. Add broccoli and simmer until broccoli is tender. In a food processor, blend together broccoli mixture, parsley and basil until smooth.
