Peachy Keen Cake

This is best made with in season, fresh peaches, but canned or frozen ones might work, too.


½ cup butter, room temperature

1 ½ cups Sugar

2 Eggs

1 cup Sour Cream

1 tsp Vanilla

2 cups Flour

1 tsp Baking Soda

1 tsp Baking Powder

1/2 tsp Salt

1 tsp Cinnamon

3 large ripe Peaches, pitted, peeled and sliced


Preheat oven to 350 degrees F. Mix the butter and 1 cup of the sugar on until light and fluffy, 3-5 minutes. Add the eggs, sour cream and vanilla and beat until combined. In a separate bowl, combine together the flour, baking powder, baking soda. With the mixer on low, gradually add the dry ingredients to the wet ingredients until just combined. In a small bowl, mix together the remaining 1/2 cup sugar and cinnamon. Pour half of the batter into a 9 inch pan sprayed with nonstick spray. Lay half of the sliced peaches on top of the batter. Sprinkle half of the cinnamon sugar mixture over the peaches. Repeat with remaining batter, peaches and sugar. Bake for 45-55 minutes in preheated oven, or until a toothpick inserted in the center of the cake comes out clean.
