Lentil Soup

Ingredients:

4 cups lentils

32 oz vegetable broth

2 cups water

1 red onion, diced

2 cups sliced carrots

1/2 cup sliced celery

28 oz can diced tomatoes

1 large potato, peeled and cubed

4 cloves garlic, minced

1/2 tsp black pepper

Directions :

Combine all of the ingredients into the slow cooker and cook on low for 7-8 hours or until the vegetables are tender.
