Ingredients:
1 ½ cups unsalted Butter, room temperature
3 cups White Sugar
5 Eggs
2 cups Flour
1 ¼ cup Cocoa Powder
1 tbsp ground Cinnamon
1 tsp Salt
½ tsp Baking Powder
½ tsp Baking Soda
1 cup milk
¼ cup Water
1 tsp Vanilla
For the chocolate topping:
¼ cup Brown Sugar
¾ tsp Cinnamon
½ tsp Cocoa Powder
Pinch of ground Ginger
Pinch of ground Cloves
Directions :
Preheat oven to 350 degrees. Beat the butter and sugar until light and fluffy. Add the eggs, one at a time, mixing until each is fully incorporated. Sift together flour, cocoa powder, cinnamon, salt, baking powder and baking soda. In another bowl, whisk together the buttermilk, water and vanilla. Begin adding the dry ingredients and wet ingredients to the butter mixture with your mixer on low speed, alternating between the two until everything is just incorporated. Pour the batter evenly into a well oiled muffin tin. To make the topping, combine the brown sugar, cinnamon, cocoa, ginger, and cloves. Sprinkle evenly over the two loaves. Bake the loaves in the preheated oven for 15 minutes, or until toothpick inserted into the muffin comes out clean.
