I stumbled across this and I found it very interesting. It’s definitely worth checking out.
This is perfect for leftover baked sweet potatoes. You can also use sweet potato casserole, but you will need to adjust the seasoning.
1 cup steel cut oats
2 tablespoons orange blossom honey
Kosher or sea salt to taste
1/2 cup cooked and mashed sweet potato
2 cups low-fat milk
1 teaspoon pumpkin pie spice
2 cups water
1/2 teaspoon cinnamon
Combine all ingredients and simmer on low for 20 minutes.
