Pumpkin Oatmeal Bars


¼ cup Flour

1 tsp Baking Powder

½ tsp Salt

1 tsp Pumpkin Pie Spice

¼ cup light Brown Sugar

2 ½ cups old fashioned oats

¾ cup canned Pumpkin

½ cup almond milk

1 Egg, beaten

1 tsp Vanilla Extract

¼ cup Molasses

½ cup Cinnamon Chips


Preheat oven to 350 degrees. Line an 8×8-inch baking dish with aluminum foil and spray it with nonstick cooking spray. In a large bowl, mix together the dry ingredients.  In a separate bowl, stir together pumpkin, milk, beaten egg, vanilla and molasses. Stir the wet ingredients into the dry ingredients. Stir until just combined. Fold in the cinnamon chips. Pour the batter into the prepared baking dish. Bake in preheated oven for 30-35 minutes, until done. Allow to cool completely before cutting into squares. Store in the refrigerator and warm them in the microwave before serving.
