Gingerbread Pancakes

These are perfect for Christmas morning and they are so easy to whip up.  They also freeze well so I usually make a double batch.

 

Ingredients:

 

1 1/2 cups flour

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1 tsp cinnamon

1 tsp ground ginger

1/4 tsp pumpkin pie spice

1/8 tsp cloves

1/8 tsp nutmeg

1/3 cup brown sugar

2 tbsp molasses

2 eggs

4 tbsp melted butter

3/4 cup milk

 

Directions :

In a large bowl, mix together the dry ingredients.

In a separate bowl, whisk together the remaining ingredients.

Slowly add the wet ingredients to the dry ingredients and stir until just combined.

Scoop about 1/4 of a cup of the mixture onto the heated griddle.

Flip when the tops begin to bubble.

Cook for about two minutes on the other side.
