Breakfast Casserole

December is a busy month for us because in addition to Christmas we also have N’s birthday on December 24 and Hubby’s on the 22nd.  Instead of a cake, he usually requests this savory casserole for breakfast.



3-4 medium-sized sausages

5 eggs

½ cup tomato sauce or salsa

½ cup skim milk

½ cup cheese

¼ teaspoon coriander

¼ teaspoon garlic powder

½ teaspoon chili powder

½ teaspoon cumin


Slice sausages into pieces and brown them in a skillet. Mix spices into tomato sauce or salsa, pour over sausages, and allow to cool.  Beat eggs and milk. Add sausages with salsa and cheese to the egg mixture.  Spray the slow cooker  with non-stick cooking spray. Cover and cook casserole on high for about 5 hours. It is best when it’s hot, but it is still good served cold.
