Spinach Mushroom Soup


3 tablespoon Butter

2 tablespoon cornstarch

2 med onions, chopped

2 cloves Garlic, minced

6 Shitake mushrooms, minced

3 onion leeks, chopped

Spinach leaves, sliced

Salt and Pepper

8 cups Chicken or vegetable stock


Directions :

Soak your mushroom 1 hour before cooking and reserve the liquid. In a saucepan, heat the butter and sauté the onions and garlic. Add cornstarch and pour in the chicken stock, the liquid from the soaked mushrooms, minced shiitake mushrooms and bring to a boil. Once it has thickened, add the spinach and immediately turn off the heat.

    Garlic, leeks, mushrooms, AND spinach? All my favorites! This simple soup is EVERYTHING! My mister runs from veggies but after I pick up some spinach, guess what he’s getting? LOL! Thanks! 🙂

      I had such a craving for it and my sweet husband offered to make it for us. Thankfully, it is simple enough to make that I didn’t have to worry him burned down the house. Lol! It always turns out well. I hope you like it.
