Honey Roasted Potatoes

This is not something we eat every day, but we always have it for Christmas dinner.  Don’t let the name fool you. It’s the perfect balance between sweet and savory.



1 pound of red potatoes, diced

2 tablespoon of diced onion

2 tablespoon of melted butter

1 tablespoon of honey

1 teaspoon of dry mustard

1 pinch of salt

1 pinch of ground black pepper


Directions :

Pre-heat oven to 375

Coat a large baking dish with non stick spray.

Add the onions and potatoes in a single layer

Mix together the mustard, honey, pepper and salt

Drizzle the mixture over potato and onions

Bake for about 35 minutes or until they are tender

    Cor, now that does sound awesome – might try that out next time potatoes are in the mix for the evening meal 🙂
