Veggie Ragout


1 cup yellow squash

1 cup zucchini

2 tablespoons parmesan cheese or nutritional yeast for a vegan dish

2 tablespoons butter (we use vegan)

½ teaspoon garlic powder

½ teaspoon Italian seasoning

a pinch of salt and pepper



Wash zucchini and squash, and cut into small squares.

Toss into the slow cooker and sprinkle with Italian seasoning, sea salt, pepper and garlic powder.

Top veggies with butter, cut into cubes, and grated parmesan.

Cover and cook on low for approximately 3 hours.

The holidays can be really hard on disabled people.   Those of us with mobility problems are often left out of parties or family gatherings because the location isn’t accessible.   I have tried hosting, but I honestly can’t handle entertaining guests for hours.  I have chronic pain and fatigue so I would be napping in the corner before the party even started.  Plus, space is limited in our house because of my gimpy paraphernalia.  The bathroom alone is enough to scare children as well as their parents.

Christmas is even harder on those with invisible disabilities.   When I leave early, most people try to empathize.   I’m sure they think “if she feels half as bad as she looks, then I’m surprised she even rolled out of bed.”  I can politely leave with a “God bless us, everyone!” and sometimes they even get the joke.  But if you look normal, then you are expected to be Santa’s little super elf because everyone feels pressured to spread themselves thin, too.  Studies have shown that the rate of depression peaks just after the holidays in the normal population.   Could you imagine how difficult it could be if you  have mental health problems already?

I refuse to put my family through the stress.  This is one of the perks of having a brain injury — I just don’t have a filter anymore and say whatever I think.  Now I’m not saying that we don’t celebrate at all.  We just modify it to fit our needs.  We still spread the love to our friends,  give gifts, watch goofy Christmas movies/cartoons and bake up a storm.  It’s not as elaborate as most people’s holiday season,  but it is still special to us.  That’s what really counts.

In the upcoming series, I want to share some of our traditions and hopefully you can find something that may help you destress your holly jolly Feastivus as well.

Berry Quinoa



2 cups quinoa, rinsed

1 tsp cinnamon

2 tsp vanilla extract

2 tbsp maple syrup

2 cups fresh berries

4 cups water

2 bananas, mashed

1/4 Tsp salt



Add all ingredients into the slow cooker and mix well. Cover slow cooker and cook on low for 6 hours. Serve and enjoy.

The holiday season often involves alcohol,  but please don’t drive if you have been drinking.  In addition to drinking,  disabled people can be impaired by medicine or even just fatigue.   Call a cab, call a friend,  or just ask to sleep it off on the couch.  It’s just not worth the risk.

Pumpkin Oatmeal


1/2 cup oats

1/2 Tsp cinnamon

1/2 cup pumpkin puree

1 3/4 cups almond milk

Top with :

1/2 Tsp cinnamon

3 tbsp pecans, chopped


Combine oats, cinnamon, pumpkin, and almond milk and set aside for overnight. Heat on the stove or in the microwave and top with cinnamon and pecans.

Mashed Not Potatoes

Thanksgiving just isn’t the same without mashed potatoes.   Mashed cauliflower is very similar, but saves a lot of carbs.  You can also customize them for whatever your crowd likes.



1 small cauliflower (or 4 cups florets)

2 ounces sour cream

2 tablespoons butter

4 ounces chicken broth

¼ teaspoon garlic and onion powder (or 1 fresh garlic clove)

Salt and pepper to taste



Thoroughly wash cauliflower and split it into florets. Place cauliflower flowers into the slow cooker bowl and pour chicken broth over it. Cook on high temperature for approximately 2 hours. Mash florets with the help of the hand mixer or blender until you receive homogeneous texture. Stir in butter, sour cream, or whatever toppings you prefer. I like to top it with fresh parsley or dill.
