Roasted Garlic Mushrooms

My family loves fried mushrooms,  but they are not very healthy.  Plus I can’t eat them because of the gluten.  This is the perfect remake.



1 Pound Mushrooms

2-3 Tablespoons Olive Oil

1Tablespoon Balsamic Vinegar

3-5 Cloves Garlic – minced or pressed

3 Pinches Dried Thyme

2 Pinches Cayenne Pepper

¼ Teaspoon Salt

¼ Teaspoon Freshly Cracked Pepper

1-2 Tablespoons Fresh Parsley, chopped




Preheat oven to 400 degrees F.

Wipe the mushroom clean.

I like to leave them whole and only cut them if they are large.

Combine the olive oil, balsamic vinegar, thyme, cayenne, garlic, salt and pepper and toss with the mushrooms to coat.

Place mushrooms on a large baking sheet.

Roast for 20-30 minutes.

Serve with fresh parsley
